Basic Cookie Dough Recipe
This is a favourite go-to recipe in our household that everyone loves. Try out our tasty combinations of dried fruit, chocolate and nuts or come up with your own. You could also substitute butter with Nuttelex if you’re avoiding dairy. Just bear in mind that the dough won’t firm up that much in the fridge and will be a little trickier to work with.
Basic Cookie Dough

Bake time: 15 mins
Ingredients
100g butter (at room temperature) or Nuttelex (if you’re lactose intolerant)
1 egg
125g caster sugar
½ tsp vanilla extract
150g self-raising flour
Step 1
Preheat oven to 180C. Line two trays with baking paper. Whisk butter and egg together. Mix in the sugar and vanilla.
Step 2
Work in the flour with a spoon until the mixture forms a soft dough. Mix in your additional ingredients. Chill in the fridge for 30 mins.
Step 3
Roll the dough into about 16 balls and place on lined baking trays. Flatten the balls slightly and bake for 15 mins or until golden. Cool them on a wire rack.

Nutty delights
Nuts provide brilliant flavour and crunch in a cookie. You can toast the nuts in a pan or under the grill before stirring them into the cookie dough. Use hazelnuts, pecans, walnuts or peanuts. Add 75g chopped nuts to the basic dough recipe.
Fruity chews
Experiment with different dried fruit such as cranberries, apricots and cherries. Add 45g of white, milk or dark chocolate pieces and 45g of finely chopped dried or glacé fruit.
Traditional chocolate chip
This is the classic cookie that everyone loves. Try it with milk, white or dark chocolate or add nuts to make it a nutty, chocolatey treat. Add 75g chocolate pieces.
Apricot & Cinnamon
There are other spices you can try instead of cinnamon, like mixed spice or ground ginger. You can also substitute apricots for raisins or sultanas. Add 75g finely chopped dried apricots and ¼ tsp ground cinnamon.
